Cerveja Coentro E Laranja

Cerveja Coentro E Laranja

Bate pras 25-30 IBU no máximo.

A acidez entra separadamente.

Passo a passo

Hydrate the yeast first. I use a German wheat yeast like Weihenstephan or White Labs WLP300. Acima disso a cerveja fica doce demais e o coentro fica enjoativo. After fermentation, which takes about 7 to 10 days at 18-20°C, you can do a secondary addition if you want more aroma. Put the peel and seeds in a sanitized mesh bag and drop it in the fermenter during the last 3 days. Don't leave it longer, otherwise you extract tannins from the seeds and the beer gets astringent. I learned that the hard way on a batch that ended up tasting like cheap soap.

Carbonation should be between 2,8 and 3,2 volumes of CO2. Higher carbonation makes the citrus notes pop more. If you bottle condition, add 6-7 g of sugar per liter. Force carbonate if you have the setup, it's cleaner.

First: don't use orange juice. Juice has sugars that ferment unpredictably and can cause refermentation in the bottle, plus it introduces pulp and proteins that make the beer hazy in an unpleasant way. Use zest only. Second: coriander seeds oxidize. If they've been sitting open for months, they lose 60-70% of their aromatic compounds. Buy from a supplier who rotates stock, or toast them lightly in a dry pan for 2 minutes before using. Light toast opens up the citrus notes without burning them. Third: the pH matters more than you think. At pH above 4,0 the cilantro flavor flatlines and the beer tastes like sweet wheat bread with a hint of spice. Keep it between 3,2 and 3,5 for the flavors to actually show up.

Fourth: hop selection is critical. If you use high-alpha bitters like Magnum or Challenger, the bitterness is too sharp and clean, and it strips the roundness that cilantro needs to feel integrated. Stick to aromatic or neutral European varieties.

Variantes que funcionam

You can turn this into a Witbier classic with orange Curaçao instead of fresh peel, or add a touch of grapefruit zest for more bitterness balance. Some brewers here in São Paulo mix in a small amount of hibiscus for color and tartness, but that shifts it into a different style entirely. If you want to keep it honest to the cilantro-orange profile, stay within the wheat base and keep additions minimal. Another variant I've tried: add the cilantro during dry-hopping after fermentation is complete, in a beer wine bag submerged in the tank for 48 hours. This preserves the fresh herbaceous character much better than heat contact. The trade-off is slightly less integration, but the aroma is noticeably brighter.

Quanto tempo dura essa cerveja?

The fresh character of cilantro and citrus fades after about 3 to 4 months in keg or bottle, even with proper packaging. The base beer is stable, but those top notes disappear. Drink it young, ideally within 8 weeks of packaging. If you're brewing this to cellars, pick a different style. Storage temperature matters too. Keep it below 10°C after packaging and the aromatic compounds last significantly longer. I've seen batches held at room temperature lose their cilantro character in under a month. If you're looking for a reference point on the style, there isn't a strict BJCP category for this exact combination in Brazil, so you'll likely enter it as a Witbier or Wild/American Common Style depending on the judge. The important thing is the balance: the cilantro should be detectable but not dominant, the orange should provide brightness not sweetness, and the base should feel refreshing not heavy.

That's basically it. Brew it, measure your pH, don't overdo the heat contact, and drink it while it's still alive.
